Cold Somen

3 pkgs. Somen (about 1/2 lb.)
6 cups boiling water
Dashi sauce:  1/2 cup dashi (made with katsuo)
     & nbsp;           & nbsp;         1/3 cup shoyu
     & nbsp;           & nbsp;          2 - 1/2 T. sugar
     & nbsp;           & nbsp;          1/2 t. msg

In large pot add somen to 6 cups boiling water.  Stir thoroughly.  Place lid on pot and bring to a boil.  Add 1 cup cold water, replace lid and bring to a boil.  Stir noodles, add another cup cold water, replace lid and bring to boil.  Remove from heat and let stand for 5 minutes.  Drain water.  Rinse well in cold water.  Refrigerate or cool.  Combine the dashi sauce ingredients.  Bring to a boil and refrigerate.  When ready to serve, divide sauce into four or five small bowls and place in large bowl of ice cubes.  Serve somen in another bowl.  To eat, each mouthful of noodles is dipped into sauce as you eat.  Serves 4 - 5.
